Sometimes I buy cucumber in bulk and realize that I don’t eat them fast enough. One day I decided to dehydrate them and now my son loves to eat them for a snack. This is quick and easy snack and gives you a reason to buy bulk cucumbers again. You can flavor these chips with any seasoning you like but I like adding some tajin. It makes the chips taste like pickles. These make a great summer snack when you don’t want something heavy but need something to munch on.
For this recipe, you will need a dehydrator or place in the oven on the lowest setting and 3 or more cucumbers.

The trick to make these chips is to not cut them too thin. The cucumber is mostly water and they will shrink. That was my mistake the first time. They were papery thin but very brittle. I cut them about 1 cm thick and they turned out better. The chips were crispy and held their shape.



Lay the cucumber slices on a dehydrating sheet. Sprinkle with some tajin on both sides and dehydrate for 4-5 hours or until completely dry and crispy. I put my dehydrator on the vegetable setting about 125 degrees F.

These make a great snack when you are craving something salty and crispy but still thinking about staying healthy.
