This is a super easy pudding recipe that you can enjoy on your holiday. If you have some extra eggnog and Chia seeds then you are all set.
This is best made the night before because you will need to let the Chia seeds soak in the egg nog. For 1 cup of liquid add 1/4 cup of Chia Seeds.
I like to mix half the liquid with the Chia seeds. Mix well.
Pour in the remaining amount of Egg Nog.
Let is sit in the fridge over night or for at least 2 hours. The Chia seeds plump up and thicken to a pudding consistency. However the seeds are still a little crunchy so it gives a nice texture to the pudding.
You could probably try this with different liquid: chocolate milk, chai tea etc. Yum!
Eggnog Chia Seed Pudding
- 1 cup Eggnog
- 1/4 cup chia seeds
In a jar or container, mix together the eggnog and chia seeds. Allow to sit for 2 hours or overnight. Enjoy as a snack or for a holiday breakfast.
