Marshmallow Mousse

This is an easy dessert that leaves you wanting more. All you need is marshmallows, coconut milk and chocolate chips.

In a large pot, add 1 can coconut milk. On medium heat, heat up the coconut milk and then add the marshmallows. I used an entire bag of large marshmallows. Small marshmallows would work as well and mini marshmallows would melt a lot faster. Stir the marshmallows until they are completely melted.

When the marshmallows are melted, turn off the heat and add 1 cup of dark chocolate chips and 1/4 cup cocoa powder. Stir until well mixed.

Portion the mixture into cups or serving dishes. Place in the fridge for at least 2 hours or until it is fully set.

Serve with some whip cream or on its own. Enjoy!!
