Instant Pot Pork Carnitas

I love the flavours in pork carnitas but often find that I don’t have the time or patience to make it in the oven. My instant pot revolutionized cooking at home and I was able to make things in a fraction of the time.

For this recipe, I used the same ingredients that I used in my Pork Carnitas post but instead of cooking it in the oven, I used my instant pot.

To make the pork carnitas, cut up the pork butt into chunks and put it a the bottom of the instapot. Add 1 onion, 1 tsp cumin, 2 bay leaves, 1 tsp oregano, 2 tbsp fresh lime juice, juice from a medium orange, the zest from the orange, and 1 cup water.

Cook the pork on high pressure for 40 minutes. When it is done, leave it to release its own pressure. Take the pork and put it on a baking tray. You will need to finish off the pork in the oven by cooking it on broil. This will help crisp up parts of the pork and give it a nice golden brown colour.

Serve with your favourite ingredients for a burrito or have it on the side with some rice. Enjoy!!

Ingredients

  • 4 pounds of pork butt or shoulder, cut in large chunks
  • 1 tsp ground cumin
  • 1 onion, peeled and halved
  • 2 bay leaves
  • 1 tsp dried oregano
  • 2 tbsp fresh lime juice
  • Juice from 1 medium orange
  • Orange zest
  • 1 cup water
  • salt and pepper to taste
