I’m still dreaming about the food that I had in Hawaii. With the colder winter weather I wish I could back. One of my favourite dishes was Huli Huli chicken. Hulu Huli chicken is normally a grilled chicken dish served in Hawaii. There are lots of different recipes for huli huli marinade. Here is my version.

Huli Huli chicken’s sweetness comes from pineapple juice. It gives the marinade a tropical twist.

Begin by mixing the marinade. Add 1 cup pineapple juice, 1 cup packed brown sugar, 3/4 cup ketchup, 1 teaspoon sesame oil, 3/4 cup soy sauce, 2 1/2 teaspoon grated ginger and 1 1/2 teaspoon grated garlic into a mixing bowl.
Add the chicken and leave it to marinade over night. The longer you let it sit in the marinade, the richer and deeper the flavours.









Ideally, the chicken should be barbecued to get a nice rich smoky taste but you can also bake it in the oven at 400 degrees F for 40 minutes. After 40 minutes, turn the broiler on high and bake for 10 minutes or until the chicken gets a nice char. Serve right out of the oven. Enjoy!

- 1 cup packed brown sugar
- 3/4 cup ketchup
- 3/4 cup low sodium soy sauce
- 1 teaspoon sesame oil
- 2 1/2 teaspoon grated ginger
- 1 1/2 teaspoon grated garlic
- 4 pounds chicken
