Shiitake Bacon

This recipe is easy and a great addition to any dish. I like having it with rice or as a tasty addition to Buddha bowls. I don’t think it tastes like bacon but has a nice smoky flavour.

Start by soaking your dried shiitake mushrooms. I like to soak mine in some hot water for about 20 minutes or longer. When they are ready, squeeze some of the liquid out of the mushroom. This will help it absorb some of the flavours of the sauce. Cut the stems off the mushrooms and then slice them. The thicker the slices the chewier they get in the end.

For the sauce, add a tablespoon of liquid smoke, 1/4 cup of olive oil and 1 tablespoons of soy sauce. Stir together and pour over the mushrooms. Give the mushrooms a good stir before putting them onto the pan.

Heat the oven to 350 degrees F. Spread the mushrooms onto a baking pan and bake for 10-20 minutes or until mushrooms get crispy. Take out of the oven and enjoy!!

  • 12-13 shiitake mushrooms
  • 1 tablespoon liquid smoke
  • 1 tablespoons soy sauce
  • 1/4 cup olive oil
