It is never too cold to have popsicles! Even when it is freezing out and windy and rainy and all those things that happen in Vancouver in October…. These popsicles will remind you of warmer tropical weather! And they are so easy to make that you can make them year round.
You will need two ripe mangos (or frozen mangos) and one can of coconut milk (don’t use the light version since full fat is the best).
Puree the mango with an immersion blender or regular blender.
To it, add the coconut milk.
Mix until smooth.
Add 1 tbsp of maple syrup (or more it you want it sweeter).
Pour into molds and freeze.
Enjoy as a snack or dessert.
I give these to my son as a treat since I know it is made with healthy fats and no preservatives.
Mango Coconut Popsicles
- 2 ripe mango (or 3 cups frozen)
- 1 can full fat coconut milk
- 1 tablespoon maple syrup
Puree the mango. Mix in the coconut milk and add the maple syrup. Pour into molds and freeze. Enjoy!
