Teriyaki Chicken with Pineapple

Have you every wanted Chinese food but not wanting the order it from a restaurant? This is a recipe that satisfies the fast Chinese food that I craved. Its a versatile dish that you can change the meats and veggies. Give it a try!

Start by mixing up the sauce. You will need 1/2 cup of low sodium soy sauce, 1/2 rice vinegar, 1 tbsp brown sugar, 1 tbsp minced garlic, 1 tbsp corn starch and 1 tsp ginger powder.

Mix all the ingredients together and set aside.

The best part of this dish is the canned pineapples. I choose canned pineapples that have low sugar. I also like full rings so that I can choose the size of the pineapple.

Cut the pineapple into chunks. Prepare the red pepper by removing the seeds and cutting it into cubes the same size of the pineapples.

Saute the peppers so that they are slightly cooked.

Add the chicken to the pan and cook on medium heat.

Once the chicken is cooked, add the pineapple and let all the ingredients cook down.

When everything is cooked, add the sauce. Let the sauce start bubbling and thicken.

Cook for 5 more minutes and then serve over rice! It’s a quick and easy meal that satisfies your cravings.

Ingredients for sauce

  • 1/2 cup low sodium soy sauce
  • 1/2 cup rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp ginger powder
  • 1 tbsp minced garlic
  • 1 tbsp corn starch

Other ingredients

  • 1 1/2 lb chicken diced (I used drumsticks and cut off the meat)
  • 1/2 can of pineapple rings cut into chunks
  • 1 red pepper sliced
