As a nursing mama, you are always hungry. I wanted to make something healthy to snack on, instead of chocolates and potato chips (LOL). This is a super easy recipe that anyone can make in a pinch. These little treats are packed with healthy fats which is good for mama and baby. These treats are yummy enough for your whole family to enjoy!
All you need is maple syrup, coconut oil and shredded unsweetened coconut.
First melt the coconut oil and mix with the maple syrup.
Mix well.
Spread onto a pan lined with parchment paper or plastic wrap.
Press down, cover and place in the fridge until firm.
Cut it up into little squares. This recipe is not too sweet but if you want it sweeter you can add honey instead.
You can also dip these into chocolate! and give them out as gifts
Coconut snack bars

- 3 cups shredded unsweetened coconut
- 1 cup coconut oil, melted
- 1/4 cup of maple syrup, honey if you like it sweeter
Melt the coconut oil in a bowl in the microwave. Mix all ingredients together. Mix well. Spread the mixture into a 10 by 8 pan or smaller for thicker pieces. Line this pan with plastic wrap or parchment paper. Press down, cover and place in the fridge to firm up. Once firm, cut into tiny squares. Keep in the fridge for a quick snack.
