Savoury Bread Pudding

Sometimes I’ll end up with lots of leftover bread in my freezer. To use up the bread, I love to make savoury bread pudding.  Full of cheese, veggies and custardy bread, this dish is hard to beat.

This dish is very versatile and works well with leftovers. Begin with cutting your bread into 1 inch cubes. You need about 4 cups.

You also need about 1 cup of grated cheese, 6 eggs, 1 medium onion, 1/2 cup mushrooms, and 1/2 cup zucchini.I also had some hot dogs in my freezer that I wanted to use up so I chopped that up too.
Preheat the oven to 375 degrees F. While the oven is heating up, sauté your onions, mushrooms and zucchini in oil. Add the rosemary, and salt and pepper Cook until everything is brown and tender. Add the hot dogs and cook for another couple minutes. Set aside.In a separate bowl, beat the 6 eggs with the 2 cups of milk. If you want, you can substitute 1 cup of milk for 1 cup of heavy cream. This will give you a more custardy pudding.In a baking dish, spread out your bread and then layer the other ingredients on it.Carefully pour the milk and egg mixture over the ingredients. Sprinkle the entire thing with cheese!Bake for an hour, or until a knife inserted in the middle comes out clean. Let it sit for 15 minutes before serving! Enjoy 🙂

  • 4 cups bread, cubed
  • 6 eggs
  • 2 cups of milk
  • 1 cup of grated cheese
  • 1/2 cup mushrooms
  • 1/2 cup zucchini
  • 1/2 cup hot dogs
  • 2 tablespoons rosemary
  • salt and pepper to taste
