Fast, easy and healthy meals are something that I try to do. Its hard to eat right when you don’t have a lot of time. Here is an easy meal that you can try out on a busy day!
Start the beef and broccoli dish by cutting and cooking some sweet onion. I used 1/2 a medium onion. Cook until the onion is slightly soft.
While the onion is cooking, prepare the sauce. In a bowl, add 3 Tbsp cornstarch and 1/2 tsp garlic powder. Stir with 2 Tbsp of water. This slurry will help make the sauce for the recipe thick.
In a measuring cup, portion out 1/3 cup of low sodium soy sauce, 1/2 cup of water, and 2 Tbsp of brown sugar.
Add the 1 lb ground beef and a slice of ginger to the frying pan and cook until the beef is done. Instead of strips of beef I’ve substituted ground beef. When the beef is just ready, add 4 cups of broccoli. Add the soy sauce mixture to the frying pan and cover. Let the broccoli cook until it is soft and tender. This should take about 5 minutes.
When the broccoli is done, add the cornstarch mixture. This will thicken the sauce.
Let the cornstarch cook for another 2-3 minutes. When the sauce because glossy and brown, it is ready!
Traditionally this dish is served on top of rice but you can serve it on pasta for some variety. An easy simple and delicious dish! Enjoy!!
