In my quest to replace dairy in my life, I stumbled upon a dairy free chocolate peanut butter pudding made from bananas and avocados. The recipe was posted on Huffington Post so you would think that it would taste pretty good. I gave it a shot!
First buy ripe avocados. You will need 1 1/2 (but I used 2). Avocados should be just slightly soft when you give it a squeeze. The softer the avocado the more of a chance that the insides are brown.
In the store, pop the stem of an avocado off. If it is still a nice green then it is just ripe. If its brown, I recommend not to get it. You will be disappointed.
Peel the avocados and put it in a blender or mixer. Take one ripe banana and also place it in the blender.
You will also need 1/2 cups of cocoa powder. For a bit of sweetness I used 1/2 cup honey. You can use other sweeteners too.
Add a bit of liquid. This can be any dairy free substitute like soy milk or almond milk. I had some hemp milk so I decided to use that.
Then add some peanut butter. I added a little less than 1/4 cup because I don’t like a strong taste.
Blend all the ingredients until it is nice and smooth. Add a bit more liquid to get the proper pudding consistency.
This pudding has a nice consistency but the next time I make it I would omit the peanut butter and just go for straight chocolate. It also had a bit of an avocado taste but it wasn’t terrible for a dairy free pudding. Give it a try!
