What’s more delicious than cheese? Well nothing really. Pupusas come pretty close though. I made these pupusas with some friends and we filled them with just cheese but they are traditionally filled with beans, cheese and/or pork.
The dough for the pupusas are made with masa harina or a masa corn flour and are gluten free!
Mix 4 cups of the flour with 2 cups of very warm water. The dough should feel a bit sticky and able to form a ball when rolled.
The dough can be formed into a bowl. This will provide a nice big area for the filling. Make sure you don’t make the dough too thin.
Fill the dough with lots and lots of cheese.
Carefully fold the sides of the dough in and form a ball.
Gently flatten the ball into a flat pancake. You may have to repair any rips with a bit more masa dough. Stack the pupusas for cooking. Cover with a damp cloth or plastic wrap if you are worried about them drying out.
To cook them, fry them with some butter and oil until both sides are brown.
The smell is amazing!! You know when they are ready, when the cheese starts oozing out!
Serve them right away with some fresh salsa and guacamole!! YUM YUM
