Using Gluten-Free Flour… GF Chocolate Chip Cookies

I am starting to notice there is a huge gluten free trend happening in Vancouver.  Gluten free foods can be found everywhere. Even all purpose gluten free flour is easily attainable.  Well I decided to try using some gluten free flour to replace flour in a non gluten recipe and see what the results are. For this recipe I am using the chocolate chip cookie recipe from Joy of Cooking and literally replacing the all purpose wheat flour with the all purpose gluten free flour.

I went to the local grocery store to buy a bag of gluten free flour.  I also bought Xanthan gum which is recommended to be added to the gluten free flour.

Cream together the butter, sugar, vanilla and egg until the sugar dissolves.  Add the flour, Xanthan and chocolate chips. Portion out the cookies using a cookie scoop and bake until golden brown.

My first attempt of this recipe I completely forgot to add the baking soda. Here are the results. Beautiful chewy cookies. Nice, I thought.  That was an easy swap.

I decided to make a second batch of cookies.  This time I remembered to add baking soda. I thought it would turn out even better now that I have all the ingredients. This was what came out of the oven.  WHAT?! I was so puzzled and disappointed.

This did not make any sense to me.  After searching on the internet I found out that it was because the gluten free flour doesn’t have anything to hold the batter as the baking soda puffs up. The results were still tasty. They were crispy thin cookies.

Chocolate Chip Cookies (Gluten Free)- Joy of Cooking

  • 1 cup plus 2 tablespoons all purpose flour (gluten free)
  • 1/2 tsp baking soda do not add if you use gluten free flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • salt
  • 1 1/2 tsp vanilla
  • 1 cup chocolate chips

Preheat the oven to 375 degrees.  Beat together butter, sugar,  egg, salt and vanilla until sugar is dissolved.  Add the gluten free flour and chocolate chips. Use a 1 oz cookie scoop and portion out cookies on a parchment line cookie sheet. Bake for about 8-10 minutes or until cookies are golden brown.

*Next thing to try.  Chocolate chip cookie cones with the crispy baking soda gf cookie dough as recommended by my dragonboat buddies.
