Miso Brussel Sprouts

Brussel sprouts might be one of my favourite vegetables to bake in the oven. This variation combines roasted brussel sprouts and miso. Miso paste gives it a wonderful umami flavour.

Begin by washing and cutting the brussel sprouts in half.

Turn the oven to 400 F. Place the brussel sprouts on a baking pan and toss with olive oil. Bake for 25 minutes.

While the brussel sprouts are roasting, prepare the miso paste. Add 2 tablespoons of miso paste to a measuring cup. Add 1 tablespoons of maple syrup, 1 tablespoon rice vinegar and 1 teaspoon soy sauce.

Toss half the miso paste with the roasted brussel sprouts. Drizzle the rest on the sprouts and serve as a side. Enjoy!

Ingredients

  • 1 lb brussel sprouts
  • 2 tablespoons miso paste
  • 1 tablespoon maple syrup
  • 1 teaspoon soy sauce
  • 1 tablespoon rice vinegar
  • Olive oil

Directions

  1. Prepare brussel sprouts by cutting the washed sprouts in half.
  2. In a 400 F oven, toss the brussel sprouts with olive oil. Roast the brussel sprouts for 25 minutes.
  3. Make the miso sauce by combining miso paste, maple syrup, soy sauce, and rice vinegar.
  4. Toss half the miso sauce on the brussel sprouts. Drizzle the miso sauce over the brussel sprouts and serve as a side. Enjoy!
