Easy Garden Shakshuka

Shakshuka is an easy way to use up any vegetables that you have in your fridge. Shakshuka is traditionally a mixture of tomato, onions and spices with poached eggs. It is also great for people who just had gum surgery or require a soft food diet.

Open the can of tomato sauce and place it in a sauce pan or deep frying pan. Add 1 teaspoon cumin, 1 teaspoon paprika, and 1 teaspoon garlic powder.

Chop up any surplus garden veggies. I used zucchini and kale.

Place veggies in tomato sauce. Bring to a simmer and cook veggies until they are soft. This should take 20-30 minutes.

Once veggies are soft. Place eggs in the tomato sauce and cook for another 3-4 minutes. You can adjust the time to the preference of your eggs.

Top with feta and enjoy!

Ingredients

  • 6-7 Eggs
  • 1 can tomato sauce (no salt or herbs)
  • Veggies (kale and zucchini or any surplus veggies in the fridge)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Feta for garnish
  • Salt and pepper to taste
