We celebrated my son’s first birthday with a smash cake. Of course with anything I give him, I try to make it healthier by making at home. Here is a recipe that I tried out.
Start by beating 4 egg whites (room temperature) with 1/4 teaspoon cream of tartar, 3 tablespoons of granulated sugar and vanilla extract. Beat until it is fluffy and has stiff peaks.




Carefully sprinkle flour onto the egg whites and fold in. Be careful because you do not want lose any fluffiness.




Preheat an oven to 325 degrees C. Fill the round pans with batter. You do not need to grease the pan because you want the batter to stick while baking.
Bake cake for 20 minutes or until a toothpick comes out clean.
Flip the cake pan over and let it cool completely. (Be careful, the bottom of my pan are loose so they fell out when I flipped mine)
While cooling, whip the 1/3 cup whipping cream and 2 teaspoons of sugar until fluffy. Set aside in the fridge.
When ready to serve, spoon whipped cream onto the cake and decorate with berries like blueberries, raspberries or any other fruit.

- 1/3 cup whipping cream
- 2 teaspoons granulated sugar
- Berries for decorating
Pan – 5×3 inch round pan or two 3×1 inch round pan
