If you are still trying to use up all your apple/pears from your garden and you need a recipe, these cookies make a great quick breakfast treat. It is really simple and can be whipped up in no time.
You will need some pears. I used Asian pears since that’s what I have in my garden.

Chop them up pears in bite size pieces

Add the pears, oatmeal, coconut sugar, egg, coconut oil, baking soda, vanilla extract, cinnamon and flour into a bowl.

Mix together.

On a parchment lined baking sheet, form into small cookie rounds.

Bake at 350 Degrees for about 10 minutes.

These cookies were very delicate and didn’t hold well (maybe because I used pastry flour?), so it is not ideal for travel. But they were not very sweet and went perfectly with my coffee.

Cinnamon Pear Oatmeal Cookies
- ½ cup coconut oil
- ½ cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- pinch of salt
- 1 tsp cinnamon
- ¾ cup whole wheat flour
- 1½ cup quick oats
- 1 cup Asian pear
Preheat the oven to 350 Degrees.
Chop up the pears into tiny cubes. I left the peels on. In a mixing bowl, add the coconut oil, coconut sugar, egg, vanilla extract, baking soda, sat, cinnamon, whole wheat flour, oats, and pear. Mix together until combined.
On a parchment lined tray, portion out the cookies into small rounds. You can flatten them slightly.
Bake for about 10 minutes or until golden brown. Cool completely.
Enjoy with some coffee or milk.
