Still have those beans in the cupboard? Well I do.
So instead of making chili or soup I decided to make brownies.
For this recipe you need, kidney beans, maple syrup, butter (or coconut oil if you want it vegan), cocoa powder, baking soda, and vanilla extract.
Blend everything together in a food processor. You want to make the beans as smooth as you can.
If you want it to be smoother, you might want to take the skins off the beans. But I didn’t mind the extra fiber.
Preheat oven to 325 degrees. Pour into a baking pan and bake for 30 minutes. Make sure you smooth out the top. Turn off the oven and then allow to sit in the oven for another 30 minutes. This allows the brownies to set and get nice and fudgy.
These brownies were nice and soft and definitely had the texture of fudgy brownies.

Fudgy Kidney Bean Brownies
- 1 can of kidney beans drained and rinsed (2 cups cooked kidney beans)
- 1/2 cup cocoa powder
- 4 tbsp butter (or coconut oil)
- 1 tbsp vanilla extract
- 1 tsp baking soda
Preheat oven to 325 Degrees. Blend everything together in a food processor. Pour into a baking container. Make sure you smooth out the top. Bake for 30 min, then turn off the heat and leave the pan in the oven for another 30 minutes. Allow to cool. Serve just as you would any other brownie.
