I know not everyone likes beets. Some people say it tastes bitter and like dirt. Other say that its earthy and rich. This has to do with the geosmin. An organic compound with a distinct earthy flavor and aroma. I find beets to taste delicious, especially when it is slightly pickled.
Start by cleaning an preparing the beets. If you get older, larger beets you may have to cut off the tough outside skin.
Cut the beets in quarters or smaller pieces. The larger they are, the longer you will need to roast them.
Coat the beets with a generous amount of olive oil and a good splash of balsamic vinegar.
Mix generously. Add a dash of salt and pepper. Don’t go overboard! You can always add more later.
Roast in a 400 degree oven for about 45 min to 1 hour. This will depend on the size of your beets.
The beets will be ready when they cut easily with a fork. Serve warm and enjoy!!
