Beer Marinated Chicken

Have you ever invited people over just to find out that they leave beer in the fridge? I’m not a big beer drinker and having beer in the fridge taking up space drives me crazy.

Because I don’t prefer beer, doesn’t mean that I don’t like cooking with it. Like my dad always said, eat it now or eat it later in another form.

To make the marinade, take one beer can and empty it into a mixing bowl.

Add 1/4 tsp cayenne, 1/2 black pepper, 3 cloves of garlic, 1/2 lime (juiced), 1 handful of chopped parsley, 1 tsp paprika and 1/2 tsp cumin. Make sure to also add some salt and pepper.

Stir the ingredients together and put it in a large ziplock bag with the chicken. Marinate the chicken for at least 1 hour but overnight is the best.

To cook the chicken, heat up the BBQ and cook the chicken over the grill. Cook for 25-30 minutes until a nice brown crust forms.

Serve it with a side of salad! Enjoy!

Ingredients

  • 8 chicken drumsticks or 6 chicken thighs
  • 3 cloves garlic
  • 1/2 lime, juiced
  • 1 handful chopped parsley
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 can beer
  • salt and pepper to taste
