This is a fun and easy recipe to add more veggies into your diet. Its also a great way to serve Shepard’s Pie to kids (and adults).
Begin by prepping the veggies. You will need 5 peppers, 1/2 cup carrots, 1/4 cup chopped sweet onion, 1 tsp minced garlic and 1/4 cup chopped parsley. Add these ingredients to a large mixing bowl. Also to the bowl, add 1/2 pound ground pork and 1/2 pound ground beef. Season with salt and pepper. To add a bit of a kick, add 1/2 cup of grated parmesan cheese.
To this bowl, add one egg and 1/4 cup of ketchup.
Mix all the ingredients really well.
Preheat an oven to 350 degrees Celsius. Prepare the peppers by cutting them in half and removing the stem and seeds. Fill the peppers with a meat filling.
Bake the peppers in a 350 degree oven for about 40 minutes or when the peppers are tender.
When the peppers are done, put some mashed cauliflower potato on top of the peppers. The recipe can be found in Sneaky Shepard’s Pie.
Sprinkle some parmesan to the peppers and put back into the oven for another 10 minutes. You can crank up the heat to 400 to really get some nice browned cheese and potato.
Once the cheese has crisped up, take the peppers out of the oven and serve hot! Enjoy
