On days when I feel like an easy home cooked meal, I make chicken and potato with a honey garlic soy sauce. This dish is quick and easy to make after a long day at work.
Begin with a chopping up half a sweet onion. Sauté the onion on medium low heat. Add two slices of ginger.
While the onion is cooking, boil 1 large potato and then begin making the honey garlic sauce. Add one tablespoon chopped garlic, 1/2 teaspoon honey and 1/4 cup soy sauce in a measuring up and stir until the honey has melted.
After a couple of minutes, the onions will start to get a bit translucent. Add one pound of chicken wings and cook on medium low heat for 20-25 minutes. Continuously stir the chicken and onion to make sure everything is cooked.
Add the honey garlic soy sauce to the chicken.
When the potato is just cooked, cut the potato in bite sized chunks. Remember, the potatoes will cook down slightly so cut them slightly larger than you want.
Add about 1/4 cup water and let the potatoes absorb the sauce. Let the chicken and potato simmer for 10 minutes. It should be ready when the potatoes break down and create a thick sauce.
