Easy Berry Cream Pie

Need to bring a dessert to a party and you don’t have time? Try this dessert. You can whip it up in no time and it only take 5 ingredients. You can change up the toppings with your favorite berries or even try fresh fruit.

Start with 2 blocks of cream cheese, 2 cups whipping cream, 2 frozen pie shell, fresh berries, vanilla and coconut sugar.

The best part of this recipe is the only baking you do is for the pie shell. Before putting the pie shell into the oven, prick with a fork to prevent air bubbles.  Follow the instructions on the pie shell and bake until golden.  Another method is to place rice into the bottom of the pie shell.

While the pie shells are baking, whip the cream with 1 tbsp of sugar. The sugar helps the whipping cream firm up. Beat until you get stiff peaks.  Don’t over beat or you will get butter.  Set aside the whipping cream and beat the cream cheese, sugar and vanilla.

Slowly fold the whipping cream into the cream cheese. This was the hardest part.  I kept adding 1/4 cup of whipping cream at at time to lighten up the cream cheese.  At this time the pie shells should be done.  Remove them from the oven and cool. Cut the berries if you need to.  Place the cream mixture into two cooled pie shells.

Here comes the fun part.  Decorating the pie. Allow the pie to chill for a couple hours to make cutting easier.

Easy Berry Cream Pie

  • 2 pie shells
  • 2 8oz blocks of cream cheese at room temperature
  • 2 cups whipping cream
  • ⅔ cups coconut sugar + 1 tbsp coconut sugar
  • 2 tsp vanilla extract
  • berries washed and dried

Bake pie shells according to the instructions on the box.  Allow to cool.

Meanwhile, whip whipping cream with 1 tbsp coconut sugar until stiff peaks form.  In a different bowl cream room temperature cream cheese, sugar and vanilla.  Slowly fold 1/4 cup whipping cream into the cream cheese mixture.  Continue to fold 1/4 whipped cream until all combined. Place the cream mixture into two pie shells.  Spread evenly and decorate with berries.  Allow to refrigerate for a couple of hours to make it easier to cut.
