My favorite way of making omelette has to be the french gooey omelette or egg foo young. But I recently came across another way of making an omelette that seemed very interesting. It resulted in soft moist eggs and it was super simple to make. The recipe came from Helen Rennie https://www.youtube.com/watch?v=6nBvt06R-No .

To make this recipe you need to add milk and flour to your eggs and cook as normal.

First whisk together the flour and milk.


When fully combined, add the eggs, salt and pepper. She has a recipe for 2 egg omelette and 3 egg omelette.

Combine well.

In a pan, brown some butter. You can tell when the butter is ready as it starts to bubble then the bubble subside.

To this add your egg. Helen uses this really neat laminating technique, but I think my pan was too big and the egg cooked fully before I could do anything. (Watch her video to see how it is done)

Then you can cover the omelette with a lid to cook the top or place under the broiler. Cook until the top is fully dry and the bottom is browned.

Fold in half or roll up. (Yes mine doesn’t look that pretty. I will need to try this recipe again.)

Serve with filling or on its own. The eggs are moist yet fully cooked. They have a hint of browned butter which always reminds me of shortbread cookies. The eggs were nice and I would definitely use this recipe again.

- 1/4 tsp salt
- black pepper

In a bowl whisk together the milk and flour until combined. Add the eggs, salt and pepper and beat well.
In a pan, brown some butter. You can tell when it is ready as the butter will start bubbling then the bubbles will subside. To this add the egg mixture and cover with a lid. Helen uses a laminating technique, but I wasn’t able to do it. Cook until the top is dry and the bottom is browned. Fold in half or roll up. The egg is very soft and might be hard to fold. Enjoy with omelette filling of your choice or on its own.
