I don’t know about you, but my herbs never last long. Yes I know there are ways to keep them fresh longer and I have tried but I have never been successful with cilantro. I saw this recipe online by Souped up recipes for preserving cilantro for 5 months! I wanted to try it right away so off I went to buy some cilantro. I still have a small bit in my fridge to see how well it preserves.

I think the trick to this recipe is to drying the cilantro out. If you ever save cilantro, you will notice that it gets slimy and almost melts. It is mostly because of the extra moisture.
The first step to this recipe is to wash and dry the cilantro. Then place it in a dehydrator on herb setting (95 degrees) for 3 hours until the cilantro is wilted.

If you don’t have a dehydrator you can dehydrate the cilantro in the sun for 4-5 hours or using a fan and dry for 5-6 hours.

Chop up the cilantro into bite sized pieces and then add salt and garlic. The recipe asks to add chili peppers but I opted to leave that out.

Place the cilantro into a clean jar and store in the fridge. Mandy says you can eat this right away but it tastes best after 3 weeks. This is what it looks like right after I made this recipe. It is still green but muted since it is dehydrated.

After 3 weeks the cilantro is not as vibrant but still tastes great. It adds nice flavor to your dishes especially if you like cilantro. Try this topping next time you have some fresh cilantro.

Preserved Cilantro
- 1/2- 3/4 tsp salt
- 3-5 cloves of garlic
- 1 bunch of cilantro about 2 cups (1 cup dried) about 70 grams
- 2 thai chili peppers chopped (optional)
Wash and clean your cilantro. Dehydrate the cilantro in a dehydrator (95 degrees) for 3-4 hours. Alternatively you can place it in the sun for 4-5 hours or under a fan for 5-6 hours.
Chop up your cilantro into bite sized pieces and add crushed garlic and salt. Add chilli pepper if you want this to be spicy.
Place in a clean glass jar and keep in your fridge. You can eat right away or save for a couple months. Enjoy in a variety of dishes.
