Dinosaur Jello Cheesecake Birthday Cake

For my kid’s third birthday, I wanted to make a dinosaur themed birthday cake. I have seen these Jello Cheesecake that looked like oceans. I wanted tor recreate one but with a Jurassic Park island. I decided to give it a shot.

After researching, it looked like the cake needed some cake acetate. I searched everywhere and couldn’t find any so instead I used some reusable parchment paper that I found in the grocery store.

To create this cake, I started by whipping the 1 1/2 cup whipping cream until nice and fluffy. Set this aside. In a separate bowl, beat 24 ounce cream cheese until smooth. Slowly add 1 1/2 cup powdered sugar, 2 teaspoons vanilla extract, and 2 tablespoons lemon juice. Beat until everything is creamed together. Carefully mix the whipped cream and cream cheese mixture until everything is incorporated.

Pour cream cheese mixture into an acetate or line 9 inch springform cake pan. Place into the fridge and chill for an hour. While the cake is cooling, place the Jello into a heat safe container. For every Jello box, add 1 cup of boiling water. Let it cool to room temperature. Prepare strawberries by washing and letting them dry. I removed the green leaves and sliced them in half.

7) Place the strawberries on the cooled cheesecake. To present leaks, slowly pour a small amount of Jello over the cheesecake. Place into the fridge to set. This will make a protective layer to protect the cheesecake. Once the Jello has set, pour the remaining Jello on the cake and place into the fridge. Leave the cake overnight. To decorate, melt some chocolate chips in a Ziploc bag in the microwave. Squeeze the melted chocolate onto a parchment paper in the shape of an island.

When it is ready to serve, place the island on the cake with some toy dinosaurs. Remove the acetate or liner carefully. Enjoy!!
