Do you ever have left over mashed potatoes and don’t know what to do with it? My favourite time to use them is for breakfast and making them into mashed potato pancakes! Its very easy and a great alternative to hashbrowns.
To make the mashed potato pancakes, place 1 egg for every 1 cup of mashed. Add 2 tablespoons of flour and 1/4 cup of grated cheese.



Mix well. Heat up a frying pan with some oil and place the mashed potato mixture in the pan. Fry the mixture until it is golden brown! Enjoy.
