Pineapple Zucchini

This year we had a lot of zucchinis. We would be getting about 2-3 zucchinis a week. During our one week trip, one zucchini grew enormous and we could not finish it. I decided to look up some recipes and found one for pineapple zucchini.

Wash and peel zucchini. Cut zucchini into bite sized bits. Add zucchini into a large pot.

Add 3 cups pineapple juice, 1 1/2 cup sugar, and 3/4 cup lemon juice.

Bring to a boil. When the liquid has started boiling, lower the heat and simmer for 25 minutes. This will let the zucchini soften and absorb the flavours.

After 25 minutes, turn off the stove and put hot liquids into clean jars. You’d be surprised at the taste. Give it a try!

  • 3 cups pineapple juice (100% juice)
  • 1 1/2 cup sugar
  • 3/4 cup lemon juice
