Rice Cooker Mochi

I’ve have an addiction to mochi and have a lot sweet rice in the pantry so I decided to give this recipe a try.

Begin by soaking the sweet rice overnight. Cook the rice in a rice cooker. I have a handy measure on the side of my rice cooker but it is usually a 1:1 water to rice ratio.

Once cooked pound the rice with 1/4 cup sugar until it is sticky and smooth.

Scoop portions of mochi and coat with cornstarch or potato starch. Serve as is or with a filling.

Ingredients

  • 2 cups of sweet rice
  • 1/4 cup white sugar

Directions
