Spanakopita Spring Rolls

This is a twist on the traditional Chinese spring rolls. I made a spanakopita filling and wrapped it in a spring roll wrapper. It was a great hand held version of the Greek pie.

Start by heating up a pan to wilt the spinach. Add a tablespoon of olive oil and then the spinach and onions. While the spinach is wilting, add the dill and parsley to the pan.

Cook until the spinach has wilted completely. Let the spinach cool and then add two eggs, and crumbled feta. Add a bit of salt and pepper to taste.

Start filling the spring rolls with the spinach filling. Wrap until all the filling is done. Deep fry in oil until brown. Enjoy!

Ingredients

  • 1 lbs of fresh spinach
  • 1 medium onion chopped
  • 3 tablespoons dried parsley
  • 2 tablespoons dried dill
  • 10 ounce crumbled feta
  • 2 large eggs
