S’mores Brownie

I hope everyone knows what a s’mores is. As kids we used to make them. Now as a parent, we make them with our son whenever we want a sweet treat. Roasted marshmallows are amazing and it always brings back memories of camping. When the weather is not great, we always tried to toast marshmallows on the stove. I recently came across this recipe that not only reminded me of roasting marshmallows but also allowed me to make my uncle’s famous brownies. These brownies were really sweet and gooey so next time I would bake the brownie for a lot longer and maybe use real marshmallows instead of marshmallow fluff. Now I can enjoy these treat anytime I want.

To start off this recipe and make it your own, use your favorite brownie recipe.

Line a baking pan with some parchment paper. Then line the bottom with graham crackers. This adds a nice crunchy element to the brownies and I would definitely add some kind of cookie into my brownies again.

Make your brownies as usual. Mix the wet ingredients first, and then add the dry ingredients.

Pour the mixture over your graham crackers.

Bake the brownies following your recipe instructions until top is set and inside is slightly gooey. I would say about 90% cooked. The marshmallow fluff wont take too long to cook and will prevent the brownie from cooking fully.

When the brownie is ready, top it with dollops of marshmallow fluff. You will not be able to spread the fluff because this stuff is sticky! Instead, use two spoons and spoon small amounts all over the brownie until evenly coated.

Put this back into the oven and cook until the top is nicely toasted.

Allow to cool. Cut and enjoy. When I first made this recipe, the brownie in the center was barely cooked even though it was in the oven longer than the recipe called for. Next time I would make sure the brownie is almost fully cooked before adding the marshmallow since I think it did prevent the brownie from cooking fully. It was still tasty and the brownie was nice and gooey so it did remind me of a nice warm melted s’more. I hope you try this recipe out and let me know how your turned out. Enjoy.

Brownie S’mores Recipe

  • about 10 graham crackers
  • 1 container of marshmallow fluff (16 oz)
  • 1 cup flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 4 tbsp butter (softened)
  • 2 cup sugar
  • 3/4 cup cocoa
  • 1/2 cup oil
  • 1 tsp vanilla
  • 5 eggs – room temperature

Pre-heat the oven to 350 Degrees.

Line a 9 by 12 baking pan with parchment paper. Then line the bottom of the pan with graham crackers. You may need to cut some to have it fit fully.

In a bowl mix together the wet ingredients, butter, oil, vanilla, sugar and eggs. Mix together. To this, add the cocoa, salt, baking powder and flour. Mix together well. Make sure to sift the cocoa powder and the flour to prevent any clumps.

Bake the brownie for 25-30 minutes until the top is cooked and the center is almost done. You want the brownie is be almost cooked.

In small spoonfuls, top the brownie with the marshmallow fluff. Cover the entire top with container of marshmallow fluff. Return the brownie to the oven. Bake for another 20 minutes until the top of the marshmallow is browned.

Remove from the oven, cool and enjoy.
