Potato Pancake with Whipped Feta and Smoked Salmon

This potato pancake is delicious. Parboiling the potato helps to retain the softness of the potato but also helps get the outside to be super crispy.

Begin by boiling russet potatoes in salted water for 10 minutes. Remove from water and let cool. Once cooled, peel the potatoes and grate. Add a dash of salt and mix well.

In a frying pan, add oil to the pan and turn onto medium. Place grated potato on the hot pan and let the potato cook. Slow slide potato around in pan or gently use spatula to lift the edges of the potato. Cook until there is a nice brown crisp bottom. This should take about 9 minutes.

Flip the potato onto a plate and then back into the frying pan. Add more oil to the pan and cook until the other side is also crisp.

While the potato is cooking, add some feta, and sour cream into a blender. It should be about a 1:1 ratio. Add a good dollop of olive oil and blend until smooth. Add some more sour cream to get the consistency that you want. Season with some dill.

Remove the crispy potato and place on a large serving plate. Spread whipped feta onto potato, add smoked salmon and sprinkle with capers. Enjoy!
