Taco Burgers

I’ve been looking for some fun ways to try new foods in the house. With a three year old, it often tough to get him to eat meat and veggies. I tried this fun version of a taco burger and it was a hit in this household! Add grated veggies like carrots and zucchini to the ground beef to add some extra nutrients.

In a medium bowl, add the ground beef, 1 tablespoon cumin, 1 tablespoon oregano and salt and pepper to taste. For some hidden veggies, add 1/4 grated zucchini into the meat mixture. Mix well.

    Take a tortilla and a small piece of ground meat. Start squishing the meat onto the tortilla. Make sure the layer of meat goes all the way to the edge and is really thin. This will guarantee the meat is thoroughly cooked.

    Assemble the rest of the tortilla wraps. Heat up a frying pan on medium. Start cooking the tortilla and meat. Once the meat is completely cooked, and the tortilla has a nice brown crust, add some cheese. Place the tomato slices on top to heat them up.

    Cook the rest of the tortillas. Serve hot with salsa and guacamole.
