My garden is sadly prepped for winter. No more fresh garden vegetables. I was able to get one final harvest but wished the radish pods were a little bigger. Yes you heard me right, if you didn’t get to your radishes in time and they bolted, save those pods. They have the same spicy flavor as the radishes. Radish pods are also great fresh.


For this recipe, I used white vinegar but I want to try fermenting them next year.
Wash and clean 1 cup of radish pods. To a clean jar, add white vinegar, water, garlic clove, salt and sugar.

Place in the fridge and allow to sit for about a week. Crunchy, spicy and tangy. These are great for snacks or salads. Enjoy.

Pickled Radish Pods
- 1 cup cleaned and washed pods
- 1/4 cup white vinegar
- 3/4 cup water
- 1 garlic clove
- 1 tsp salt
- 1 tsp sugar
Wash and clean pods. Place the pods and garlic in a clean jars. In a measuring cup mix together the vinegar, water, salt and sugar. Mix until dissolved. Pour into the jar. Cover and place in the fridge for about a week. Enjoy!
