Red Currant Jam

With only two ingredients, you can make your own jam. Red currants are full of nutrients like antioxidants, vitamins and minerals. Red currants are also full of pectin so you don’t need to add anything else to this jam to thicken it up.

First, clean and destem the currants. Place the currants in a small sauce pan with equal amounts of sugar. Cook on low heat, stirring occasionally. Continue to cook until the currants have broken down and all of them have popped open.

Remove from heat and let it cool. Strain if you don’t like seeds. Because of the pectin content in the jam, the jam should thicken on its own.

Enjoy on toast, waffles, or even on oatmeal!

Ingredients

  • 1 cup red currants
  • 1 cup sugar

Directions

  1. Clean and de-stem currants.
  2. In a small pot, add currants and sugar in a 1:1 ratio. Cook until the currants break down. Let cool. This will allow the pectin to thicken.
  3. Enjoy!
