I love homemade crumpets but some recipes take time. This was a recipe I found that was super fast and easy. It also used a bunch of sour dough discard!! Double win.
Mix 2 cups sourdough starter, 2 cups white flour, 1 teaspoon baking powder, and 1/2 tsp salt in a mixing bowl. Slowly add water until the mixture is a consistency of pancake mix. Add a little bit more water and let it sit. The mixture should be looser than pancake mix to allow for bubbles.

Heat up a non-stick pan on low heat. Butter pan and crumpet rings. Place rings on the pan and fill with batter until half way.

Slowly cook for 10-15 min. If you fill rings too much you don’t get the bubbles. Part way through the cooking process, if the bubbles don’t burst, take a paper towel and dab the surface or use a toothpick to pop the trapped bubbles.

Flip the crumpet when almost completely cooked through. Cook for another 1-2 minutes until brown.
