Lime Icebox cake

Here comes another icebox cake that is perfect for summer. It can be eaten refrigerated or frozen like an ice cream cake.

To make this recipe you will need Maria cookies or similar cookies. I used these butter cookies that were in my pantry.

The ingredients for this cake is simple and can be made ahead of time. You will need lime, evaporated milk and condensed milk.

In a blender, blend the lime juice, evaporated milk and condensed milk into a creamy mixture. This makes up your cream base.

Line a cake pan or spring form with some parchment paper. Layer cream and cookies into layers. Continue until you run out of cream. Save some cream for the top of the cake.

Top the cake with a final layer of cream and place in the refrigerator for a couple hours or overnight.

Enjoy this tart sweet dessert. It is light and zingy and perfect for summer. To make this extra special, cut this cake into pieces and place in the freezer. Remove from the freezer for about 10 minutes before eating. This makes this cake a nice frozen treat. It really enhances the tartness of the lime. Next time I would layer the cream thicker.

  • Maria cookies or similar cookies (about one sleeve)
  • 1 can of evaporated milk
  • 1 can of sweetened condensed milk
  • 3/4 cup lime juice about 6 limes

Line your cake pan with parchment paper. In a blender, mix together the lime juice, evaporated milk and condense milk and mix well.

Layer the bottom of your cake pan with a layer of cream. Then a layer of cookies, then top with layer of cream. Continue until you used up the cream. Make sure you save enough for the top.

Cover and refrigerate for a couple hours or overnight. Serve soft or place in the freezer for a nice frozen treat.
