Healthy Carrot Cake with Cottage Cheese Icing

Here is a recipe for some healthy carrot cake.

Begin by preheating the oven to 350 degrees. In a mixing bowl, mix 1 cup flour, 3/4 cups almond or oat flour, 1/4 cup flax flour, 1 1/2 cup sugar. 2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon. Stir to combine.

In the same bowl, add the 3 cups of grated carrots, 4 eggs, 3/4 cup vegetable oil, and 1 teaspoon vanilla extract. Combine all ingredients until everything is blended.

Line a baking tray with parchment paper. This will help the cake from sticking to the tray. Bake in the oven for 30 minutes or until a toothpick comes out clean.

Remove cake from oven and let it cool to room temperature before frosting.

For the icing, mix all ingredients for the frosting into a blender and blend until smooth.
Let the mixture set for 20 minutes in the fridge.
Spread on cake and enjoy!!

  2. Let the mixture set for 20 minutes in the fridge.
  3. Spread on cake and enjoy!!
