Crystal Gummies (Kohakutou)

This was my first time making these japanese gummies. They were super easy to make and they have a very unique texture. They are crispy on the outside and soft on the inside. You can make these in any flavor that you want by adding different candy flavoring. These make beautiful unique gifts.

To make this recipe, you will need agar agar, sugar, water, food color and flavoring. I used this brand of agar agar and gel color. I dissolved some of the gel color in some water to make it easier to use. You can use liquid food color as well.  I did not have any flavoring so I left mine plain.

The first step would be to pour your agar agar into a pot of cold water and let it dissolve for about 5 minutes. Then begin simmering for about 3 minutes. To this mixture pour in the sugar and stir until it starts to bubble.

Then pour this mixture into a shallow dish. Now we can start adding the food coloring. Begin dropping the colors and swirl with a stick. Add one or two colors to create a nice swirl. I found that the gel color floated a bit since it did not mix well with the agar, but the color eventually settled into the liquid.

Place the mixture carefully in the fridge to set. This will take about an hour or more. Once set, cut around the edge of the dish and use a spatula to help scoop out the jelly. Cut the jelly into strips and then cut into smaller pieces.

Now its time to start shaping the jelly. I tried making crystal shaped but cubes and rhombuses also worked. Place these jellies onto waxed or parchment paper. With all the shaved pieces, I put them into little piles. Some of these fell apart.

Allow to air dry for about 5 days. Flip them over after a couple of days. The outsides will start looking frosted and dry. I left mine in the cold oven to dry.

These would make nice little gifts to give your friends or family. Enjoy.

  • 1 1/2 cups cold water
  • 10 g of agar agar powder (about 5 tsp)
  • 2 3/4 cup sugar
  • 1/4 tsp flavoring
  • food coloring

In a pot pour the agar agar powder into the cold water. Allow the agar to soak for about 5 minutes. Then turn the heat to medium low and allow to simmer for a few minutes.

Next, add the sugar and flavoring of your choice. Allow to simmer until all the sugar is dissolved.

Pour the mixture into a shallow dish. Drop a few drops of food coloring and swirl with a stick.

Place the dish into the fridge and chill until set. This will take at least an hour.

After the jelly has firmed up, cut around the edge to loosen the jelly from the dish. Use a spatula to help scoop out the jelly.

With a knife, cut the jelly into long slices and then into smaller pieces. Start shaping the jelly into crystal points by cutting the edges off. You can also try other shapes. 

Place these jellies onto a parchment/wax paper lined tray. Allow to air dry for about 5 days. Flip halfway through. The crystals will start looking frosted and dry. The jellies will be crispy on the outside but soft on the inside.

These make great treats to bring to a party or to gift your friends and family. Enjoy.
