Crepes

This is a simple recipe but wonderful for quick breakfast. I wanted to try something different for my son instead of his regular breakfasts. I decided to fill these crepes with nutella because who wouldn’t like that. I also made some with cinnamon sugar for myself.

The first thing you need to do is prepare the batter. This can be done the night before, which makes your morning so much easier. If you don’t, leave the batter to sit for 30 minutes to allow the bubbles to escape from the batter. The batter is made of milk, eggs, butter, sugar and vanilla.

Heat your pan to medium heat. I added a little oil to start off. Pour about 1/4 cup of batter (you may need to adjust after the first one.) Quickly rotate your pan by tipping the batter and twirling to spread the batter in a thin layer. I think this is the hardest part. I did try to use a spatula to help spread the batter to make the crepe even.

When the crepe starts looking dry and less glossy, flip over. You want the crepe to be golden. This image is not as golden as I like but you can flip again to toast it more.

Add a variety of filling. Here I added a little Nutella. You can add cream and fruit, strawberries Nutella, jam or even savory elements such as cheese and eggs or shredded meat.

To roll these up, I usually fold in the sides and roll it up into a tight little roll. 

For the cinnamon and sugar version, I added a little butter, and then sprinkled with sugar and cinnamon. This one is a little grainier but I love the taste of cinnamon. I would probably switch the sugar to honey or maple syrup next time.

Simple Crepes (for 7 crepes)

  • 1 cup milk
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 1/2 tbsp butter
  • 3/4 cup flour
  • 1/2 tbsp sugar

Mix everything together until smooth and leave in the fridge overnight or at least 30 minutes.

Heat a pan on medium heat. Add a little oil or butter. Pour about 1/4 cup of batter to the pan and quickly start tipping and twisting your pan to spread the batter out evenly. 

Cook until the crepe starts losing its glossy shine. Flip over and cook until golden brown. Continue until all your crepes are done. 

Fill your crepes with nutella, fruit, jam, or other toppings of your choice. Roll up the crepes and enjoy. This is a quick and simple recipe that you can enjoy for breakfast.
