Broccoli Leaf Stir Fry

Growing winter veggies has been an interesting experience. All through summer my broccoli only produced leaves. Just recently there was some signs of florets but not a lot. I’m hoping that by Spring, we will have more broccoli.

In the meantime, I have been experimenting with cooking broccoli leaves which are similar to kale. They still have a broccoli flavour but a leaf form. I decided to use the broccoli in a stir fry similar to the Hawaiian luau stew. Traditionally luau stew is made with taro leaves. Taro leaves are very hard to find so instead I substituted it with broccoli leaves.

Start by chopping up the broccoli leaves into 1 inch strips. Set aside.

In a pot or large frying pan, add some oil and brown the pieces of pork. Once browned, remove from heat. Add the onions and ginger to the pan.

Add the broccoli leaves and 1 cup of water. Layer the pork on top of the leaves and cover.

Let the stew simmer over medium heat for about 1-1.5 hours. Cook the leaves depending on how tender you want them. Add salt to taste. Enjoy!

Ingredients

  • 1 pound broccoli leaves
  • 2 tbsp dried onion or 1 whole yellow onion
  • 1 tbsp ginger, sliced
  • 1 pound pork shoulder, cubed
  • 1-2 teaspoon salt

Directions
