Masa Harina Pancakes

I thought I would try something different for breakfast. I found a recipe using masa harina. Masa harina is a corn flour that is used to make corn tortillas but can also be used for other things like pupusas, corn bread and even cookies.

Begin by mixing 1 cup masa harina, 1/3 cup sugar, 2 teaspoon baking powder, 1/4 teaspoon salt, 3/4 cup milk, 2 eggs, and 2 tablespoons of melted butter in a mixing bowl. Of course, my kiddo is at the age that he wants to help all the time, so it was challenging to get some good photos.

Stir in 1 cup of fresh or frozen blueberries.

On a hot griddle or frying pan, cook your pancakes until they are golden brown.

Serve hot with maple syrup. Enjoy!

    Thank you for this recipe, I look forward to trying it! I noticed that the recipe mentions 2 eggs, but the picture depicts 3 eggs. I will be making the recipe as the picture shows, as I love the idea of having the extra protein and moisture!
