When you are making homemade ginger beer, you end up with a lot of excess ginger in your ginger beer that usually gets tossed out. Here is a simple thing you can do with all your left over ginger from making ginger beer. It is a simple tasty way to make a sweet snack and prevent a lot of food waste. First drain as much liquid as you can from the ginger from your ginger bug.

Add a couple tablespoons of sugar. For about 1/4 cup ginger, I used about 1/4 cup sugar. Mix well.

The liquid from the ginger will start dissolving the sugar. Spread the sugary ginger on a non stick sheet, waxed paper or plastic wrap. You want to make sure it is non stick to make it easier to flip over.

For my candy, I used the sun but you can put this in the oven on the lowest setting or place it in your dehydrator.

My candy took about 10 hours of sun to dry out. I did this over a two day spread. I flipped the candy over once to make sure both sides were nice and dry.

You will tell if the candy is ready when the candy is no longer sticky or moist. It wont get super dry if you are just drying in the sun.

Place the candy in an airtight container and enjoy.

Ginger Bug Candy
- extra ginger from the ginger bug/ginger beer
- sugar
Drain as much liquid from the ginger. Mix equal parts of sugar and ginger. The remaining liquid from the ginger will start dissolving the sugar.
Line a baking sheet with non stick film, waxed paper or plastic wrap. Place in the sun for as long as needed or place in an oven on low or place in your dehydrator. (Do not use plastic wrap if you are placing this in your oven). Flip when the surface feels dry.
When I did this out in the sun, it took me about 10 hours (two days). I flipped over once on the end of the first day. Hope you enjoy.
