Mango Tapioca

This is a really nice simple dessert that can be made ahead of time. It is quick and easy and great with fresh mango. If you don’t like mango, you can easily swap it with a fruit of your choice.

You will need to prep your tapioca by boiling in them in plenty of water. Boil for about 10 minutes and then turn the heat off and let it sit for 3 minutes.

While the tapioca is boiling, dice some fresh mango. I used about 3 -4 smaller mangoes or 2-3 larger ones. I added more since I wanted more fresh fruit added in. Add about half of the mango into a blender with the coconut cream.

To the blender, add 1/2 cup of condensed milk. Taste and add more if needed. This will depend on your preference and how sweet the mangoes are. Blend well.

Then you will need to rinse and drain your tapioca. This was the most time consuming part.

In a large container or bowl, mix together the mango coconut mix, tapioca and the remaining fresh diced mangoes. (you can save some to serve with some on top). Eat right away or you can store this in the fridge to eat later.

It is a nice refreshing dessert that is not too heavy. The fresh fruit really makes a difference. Enjoy.

Mango Tapioca Dessert

  • 3 small mangos or 2 large mangos (more if you like)
  • 1 cup mini tapioca pearls
  • 1/2 cup of Condensed milk
  • 1 cup of coconut milk or coconut cream
  • 6 cups of water

Boil and prepare your tapioca pearls. Add the mini tapioca pearls to boiling water. Boil on medium/medium low for about 10 minutes. (or follow the directions on your package). Make sure you are stirring constantly to prevent the pearls from sticking. After the 10 minutes, turn the heat off and let the pearl sit for about 3-5 minutes.

Drain your tapioca pearls and rinse with cold water.

Prepare the coconut filling. Dice the mango into small cubes. Add about half of the mango into the blender (1 cup) with the coconut milk and blend well. Add the condensed milk and blend until smooth. Taste the mixture and add more condensed milk if needed.

In a large bowl, mix together the mango filling, the tapioca pearls and remaining diced mango. Save some of the diced mango for the topping if you wish.

Enjoy right away or put in the fridge for later.
