Carrot and Apple Muffins

I know I am not the only parent who tries to get their kids to eat their veggies. Well this time I tried making these carrot and apple muffins. I thought my son would like something sweet by he didn’t really like this. I really enjoyed it though. These were super moist and tasty and it was because of of the apple that is in this recipe.

Prep work for this recipe wasn’t too bad either. You will need to grate the apple and the carrots. Assembly was easy as you just mix everything together.

Start by mixing the eggs, oil and sugar. I also used half coconut sugar and half white sugar.

Mix in the dry ingredients and then add in your grated apple and carrot. Mix well.

The batter is quite chunky but gives the muffins a great texture.

Portion the batter into tins. I opted for mini cupcake tins as I wanted to little quick snacks.

Bake at 375 Degrees for about 17 minutes.

Enjoy for breakfast or as a snack or even dessert. They are great on their own and I think would pair well with some cream cheese icing. Enjoy.

  • 2 cups grated carrot
  • 1 grated apple (I used a large cosmic crisp)
  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup sugar (or 1/2 cup coconut sugar and 1/2 cup white sugar)
  • 2 cups flour
  • 3 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt

Preheat the oven to 375 Degrees. Line a tray of muffin tins. Mix together the eggs, sugar and oil. Add in the dry ingredients and mix well. Finally add in the grated apple and the grated carrot and mix again.

You can add other ingredients as well such as dried fruits or raisins and nuts.

Portion into your tins. Bake for about 17 minutes for small muffins and 25-30 minutes for larger muffins.
