This recipe is just like any shortbread cookie recipe. You need flour, butter and sugar. The dandelion petals add a nice yellow color but the taste is very subtle.

Start by blending all the wet ingredients together. Cream the butter and sugar until creamy and fluffy and then add the dandelion petals.



Your dough will be a little chunky because of the petals. Knead dough to combine.


Roll out the dough with a rolling pin and cut out shapes. I used a flower cookie cutter.





Place the cookies on a baking sheet and bake until light golden brown. You want to keep these cookies light to keep the yellow looking vibrant. I topped these cookies with a drizzle of dandelion honey. They were a tasty snack.

- 1 cup butter
- 1/2 cup sugar
- 1/2 cup – 1 cup dandelion petals
- 2 1/2 cups of flour
- salt
- optional dandelion honey
Preheat the oven to 325 Degrees
Cream the butter and sugar until blended well. Add the dandelion petals and mix well.
Slowly add the flour until dough comes together. Knead to combine.
Roll out dough and cut cookies using a cookie cutters.
Bake your cookies on a parchment paper lined cookie sheet.
Bake for 20-25 minutes or until tops are lightly golden.
Serve and enjoy. Optional, drizzle dandelion honey on top of your cookies for a glazed cookie.
