My kid (and partner) is going through a stage where they won’t eat as many veggies as I would like them to. So I decided to get creative and add veggies in EVERYTHING!! Including our banana bread recipe. I used the banana bread recipe from our food blog but included 1/2 cup of grated zucchini.
Note: the pictures were for 2 recipes of this banana bread. I usually pre-cut the banana bread and store in the freezer.
Begin by mashing the bananas and grating the zucchini. I used 2 very ripe bananas and 1/2 cup of grated zucchini. In another recipe, I used some grated carrots as well.

Melt 1/2 cup butter in the microwave. Add the 2 eggs and 1 cup sugar to the mashed bananas. Add 1/2 cup grated zucchini and mix everything together.



In the same bowl, stir 2 cups flour with 1/4 cup cocoa, 1/8 cup flax, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt and 1 cup nuts.
Stir everything together.



Transfer to greased loaf pan. Bake in 350 degree oven for about 1 hour, or until a toothpick inserted in the center comes out clean. Let stand 10 minutes.

Remove from pan and place on cake rack to cool. Wrap to store. You can also store in the freezer for a couple weeks. Enjoy!

- 1/4 cup cocoa powder
- 1/8 cup ground flax seeds
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup walnuts (optional)
- 1 cup chocolate chips (optional)
Method
