Chicken Satay Skewers

Recently my dinners have been simple and easy. As a working mom, it is hard to make delicious and healthy food while working full-time. I started to experiment more and make things that I haven’t made for a while. One of the things that I have missed was chicken satay skewers.

Begin by dicing the boneless chicken. Set this aside while you prepare the marinade. In a mixing bowl, add 1 tsp turmeric, 2 tsp curry powder, 1/2 cup canola oil, 1/4 cup soy sauce, 1 tbsp fish sauce, 2 tsp garlic powder, 2 tsp ginger powder, 2 tbsp brown sugar and 2 tbsp lime juice. Add the diced chicken and mix well. Set aside for 2-3 hours to marinate. Marinating it the night also works and will make it even more flavourful.

Prepare skewers by soaking it in water 30 minutes before cooking. Assemble the chicken onto the skewers.

Bake in a 350 degree oven for about 20-25 minute. Turn on the broiler to high and brown the chicken. This should take about 5-10 minutes depending on your broiler and how high the pan is. Remove from the oven.

Serve skewers with a curry dipping sauce or peanut sauce. Enjoy!
