This is a simple hack if you are having a hard time finding ramen in your local grocery store.
All you need it spaghetti and baking soda.
Boil 5 cups of water and add to it 3 tsp of baking soda. The water will bubble because of the chemical reaction.
Boil the pasta in this alkaline water. You don’t want to cook your pasta a la dente. Instead you want to cook it fully cooked. Don’t worry it won’t be mushy, instead it will be chewy.
Test the pasta by tasting it. When the pasta is done, neutralize the baking soda by adding vinegar. This will eliminate the bitterness caused by the baking soda. When you are pouring the vinegar in, the water will bubble again. Stir well.
Now the pasta is ready to rinse. Rinse well. The water will appear yellow just like how it would look when cooking regular ramen.
Serve this with any type of soup: miso, tonkatsu or even just some chicken broth. It is a great noodle substitution as the noodles are less pasta like and more noodle like. Check out my other ramen recipe: https://eatitnoworeatitlater.com/2015/03/21/ramen-adventures/

- spaghetti (2-3 servings)
- 5 cups of water
- 2 tsp of baking soda
- 6 tbsp of white vinegar
Boil the water and add the baking soda. The water will bubble when you add the baking soda. Add you noodles and boil until the noodles are done (not a la dente). For regular spaghetti I boiled it for about 10 minutes (a la dente was 7-8 min). Taste the noodles to check if it is done.
When it is done, add the vinegar to the water and stir well. It will again bubble. The vinegar neutralizes the baking soda. This prevents your noodles from having a bitter taste to them.
Now your noodles are done and you can rinse the noodles well. Add you favorite broth to the noodles or stir fry to make yakisoba.
